As the proclaimed “Cheese Curd Capital of Wisconsin” since 1984, Ellsworth continues to celebrate its dedication to producing the freshest, squeakiest cheese curds, loved by fans near and far. With 15 unique flavors and a longstanding tradition of excellence, the creamery is a must-visit for curd lovers everywhere.

“National Cheese Curd Day is a really special occasion for us,” says John Freeman, Director of Sales and Marketing at Ellsworth Creamery. “It’s the perfect time to showcase the hard work of our farmers as well as our team members, who bring these curds to life.”

More than 200 family farms, located within 80 miles of Ellsworth’s Wisconsin headquarters, produce the famous cheese curds. These curds embody the cooperative’s rich history and strong commitment to quality. Freeman adds, “Our farmers are known for their award-winning milk quality and also their sustainable farming practices. Their dedication to producing top-tier milk shines through in every squeak of our curds.”

The squeak, that hallmark of fresh cheese curds, is what draws thousands to Ellsworth Creamery’s retail stores each year, especially on National Cheese Curd Day. Freeman says the fresh, natural curds are the top sellers. Flavors like Hot Buffalo, Cajun, and trendy Dill Pickle follow closely. “Our cheese curds allow that quality milk our farmers provide to really stand out,” Freeman explains. “They’re fun, easy to snack on, and pair well with so many different things.”

On National Cheese Curd Day, Ellsworth Creamery expects to sell over 2,000 pounds of cheese curds. This surpasses sales from any other day of the year. Customers flock to the stores not only to pick up their favorite curds but also to try innovative new varieties.

Ellsworth’s success extends beyond Wisconsin, with curd enthusiasts from across the country discovering the joy of these squeaky bites. “In places where cheese curds aren’t as common, we focus on education,” Freeman says. “Once people understand what a cheese curd is, and taste that freshness, they’re hooked.”

For those looking for something new, Freeman suggests getting creative with your curds. “We’ve seen fun trends like poutine—curds over fries with gravy. Some restaurants even bread our Dill Pickle curds in crushed Hot Cheetos and serve them with Sriracha dip. Cheese curds are incredibly versatile!”
